After purchasing the config, is it possible to have my IP Phone and my softphone BOTH ringing at the same time? In other words, is it possible to have 2 SIP simultaneously on the same number?

It is possible, but only one will be able to "ring" both can be picked up though,
If you look at the topic about Avaya G250 PBX/Gateway - Sip Trunking, read the section about Snom m3 Phones (which we do sell) you can have up to 8 handsets and 8 identities (numbers) and choose what handsets they ring on.
