I know that it's not a cool smartphone/android/apple product, but ALOT of providers still do sell phones that run on symbian^3/S60/S40

That is not going to happen! just buy an Android phone and be done with it! 
I love my Nokia E71, but I clearly understand how fruitless it is to support every platform out there, especially when Fongo is already having a hard enough time debugging the clients it already has. As the free soft client is a great form of advertising for Fongo, and there is not just enough actively used Symbian devices in Canada to justify so many resources on so little advertising potential. And most of those old Nokia owners are going to be Android owners soon enough, because there is no where else for them to turn to.
However, unlike most VOIP providers, Fongo will not totally leave orphaned platform users high and dry. For $50, you can buy standard SIP settings that will allow you to use any SIP client out there. Fongo works rather well with my Nokia E71's default SIP client.

I also have an E71 and I love it. What do you mean the $50 SIP settings you bought (from Dell Voice?) " works rather well"? Is it kinda OK, I.e. Noisy, but tolerable or pretty OK, or very good? Let's say on the scale of 1 - 10 (10 = highest ) what is the quality of the voice connections? I use Skype on the E71, I would say Skype is 8 - 10, depending...

Nokia is touted for having the single best VoIP API for cellular and/or mobile phones. Remember that network strength varies depending on environmental factors, and WiFi is usually safer than GSM/CDMA, 1x/Edge or EVDO Rev.A/B or HSPA/HSDPA+ (3/4g)

I do not believe Dell Voice offers the option to buy SIP settings for $50 anymore. However, another Fongo site, Freephoneline.ca still does. SIP settings allow one to use various SIP VOIP devices, Your Nokia E71 has a very good SIP client.
As for quality, that depends fully on the quality of your internet connection. If you have issues, it is highly unlikely it is an issue with Fongo. And sadly, Fongo has no control over the quality of your internet connection, even though it still gets blamed for it.
As for Skype quality, it tend to be better on less that good internet connections, because it was built from the ground up to deal with nasty internet connections. Downside it that it is limited much more on what client it can use.
