Re: Number of phones on one ATA
It depends on your ATA. I believe the PAP2 can easily handle 4 phones on the same line. I would try not to put too phones with real bell ringers on the line though, because they are a bit harder on the power. I seriously doubt you will run into any problems with any ATA connected to 3 phones.

Re: Number of phones on one ATA
I read one specification sheet that said the PAP2T has a REN (ringer equivalent Number) power of 5. On each of the phones you plug in there should be a REN number on them. Just make sure that the total on all your phones is less than what your ATA will support.
Taking each phone as a REN of 1 is a pretty safe bet, so if the spec sheet I read was right you should be OK with up to 5 phones on a PAP2T.
Personally I have 2 Vtech walkabout phone, a standard hang on the wall phone in the kitchen, a desktop phone on my desk, and a fax in the basement. I don't have the ringer turned on in the kitchen, but all the rest work fine.
By the sounds of your set up, you should be fine also, but check your REN numbers as a good guide as to what you can put on your ATA.
EDIT / Addition.
You probably know this, but make sure you disconnect your house wiring from the incoming Bell line before you connect your ATA to it otherwise you will get problems. As you will probably work out, you may need to run a separate line over to your modem so your internet still works. I know it sounds obvious but it is easily forgotten, not that I forgot..... ok... I forgot....
