For using the regular FPL Softphone interface only, which port should we open?? Is it just 5060 and 5061, or are there more other ports to open up besides these two? For some reason, even though my friend ENABLED the UPNP, he still cannot dial out or in. I just want to make sure that he's not missing any other ports to open up.

All you need are 2 ports open. 5061 will do, and an rtp port 12000 as an example. As long as nothing else is using those ports, which is not likely, you should do fine.
However, I suspect that is not your problem. If I were to guess, your friend's computer is behind 2 routers. If you can tell be what he has for routers and modems, I can be a little more helpful. I might add that UPnP is mostly useless, I would disable it just to have one less problem to deal with.
