This is just a hypothetical, but it is an important consideration for me.
I'd like to port my main phone number over to Fongo. If Fongo ever shut down overnight for whatever reason, what would happen to my ported phone number? Would there be any way to move it to another provider?

Fongo is a licensed competitive local exchange carrier (CLEC) owned by it's parent company, Fibernetics. So though not impossible for the company to go under, the company is too vested and supported to act as a fly by night operation. Running a VOIP operation is rather cheap, especially when you scale up. Fibernetics owns whole exchanges, so they do not have to rent from someone else. Fibernetics can get their money back on 20 or 30 numbers on an exchange, and the rest of the 9000+ numbers in that exchange can be given away to Fongo for free.
Because Fongo is a CLEC, I am sure by law, there are things Fongo would have to do for their customers before they go under. I do not know what, because to be honest, I have never heard of a Canadian CLEC going under.
