Which order should this be done in? Should I Transfer My Number from my landline or order the VoIP Unlock Key first?
If I order the VoIP Unlock Key first, will the SIP Username change if I Transfer My Number later, or will it always be the original phone number?

Your username will always be the current phone number associated with the account, so it will change when you port in your number.
Personally I am a bit cautious, so I would buy the unlock key first and test it with the number you are given, then when you know it works with your setup port in your number.
It doesn't really matter which way around you do it as far as the system is concerned, but the port will take some days and the unlock key should be fairly instant. The only thing you will have to change is the username which shouldn't be too much trouble once the port is done.
